THE HARVEST

"The manual selection allows us to carry out a final control, bunch by bunch, in order to separate those grapes which are not in perfect condition and remove the widest part of the stems without breaking the grapes."

Then the moment of the harvest arrives. By taking care of each bunch of grapes to avoid them to be broken prematurely, the grapes are transported into small 15 kg boxes to the winery. The winemaker analyses the key quality parameters of the grapes such as the alcohol content, the colour, the sourness and the polyphenols index, with the purpose of valuing each batch of grapes and determining the most appropriate wine-making process.

WINE-MAKING
All the grapes which are destined to Reserva and Gran Reserva wines (like our flagship brand 200 Monges) are strictly chosen in the selection table. It allows us to obtain all the grapes we need for our excellent wines in perfect sanitary conditions.
